“I named it ‘Neat Coffee‘ because I had this idea that I would eventually do coffee drinks in a cocktail style. Like serving espresso ‘neat’ how people drink whiskey ‘neat’, with a side of sparkling water. I’m also playing around with cold brews served ‘neat’.
“I’ve also been experimenting with different, unexpected flavors like ginger molasses and turmeric. I love to see the look on someone’s face when they try something new.
“I have always loved how coffee brings people together. How you meet an old friend over coffee; or you have a business meeting or a first date over coffee. I just think the community that happens around coffee is really exciting.
“There is something timeless about a coffee shop as a place for people to gather and connect. I feel like we have a real need for that in Costa Mesa, more big places to gather with our neighbors and connect with each other.
“I like sharing that part of why I’m doing this. I want people to see my heart in what I’m doing – to see the heart behind the coffee.”
